Meet our wines ; Ojo Del Amo

The Cava Quintanilla winery is located in the municipality of Moctezuma, in San Luis Potosí, Mexico. At an altitude of 1,630 meters above sea level in the Altiplano Potosino region, the climate of the area is semi-desert; the average temperature during the flowering season and up to harvest time ranges from 28°C to 36°C (82°F to 90°F). At night there is a sharp drop in temperature that can reach 12°C (54°F). The vines are grown in a clayey soil with a high mineral content, which gives the wines body, good color intensity and very intense aromatic profiles.

For those who love the Tempranillo grape, we highly recommend Ojo del Amo Blend 2018, made with 50% Tempranillo, 25% Syrah and 25% Merlot. A wine that acquires a totally unique essence, reflecting notes of red fruits and oak. To create a complementary pairing with this delicious wine, we recommend foods prepared on the grill or smoked, such as CAO’s Smoked Burrata. For those who prefer a contrasting pairing, we recommend our fresh Beef Aguachile, creating an exceptional experience.
