This emblematic dish of Mexican cuisine is one of the most representative of our national festivities. At CAO, we take pride in presenting our own interpretation of this classic, featuring an exquisite filling of confit pork combined with pear, apple, raisins, perón, and nuts.
But that’s not all! To further enhance the flavors and texture of this iconic dish, we cover it with a traditional nogada sauce made with walnut, a drizzle of oporto reduction, and garnish with fresh parsley, pomegranate, and bicolor almonds. Is your mouth watering yet?
